Keeping canned turkey on hand is never a bad idea. If you need a side dish, a snack to pass or a meal of lunchtime you can always use turkey to make a great meal. An example of that is the Southwest Turkey Pasta Salad. This easy to make salad is perfect for a summer picnic or a winter meal on the go.
Start by cooking one box of noodles. Elbow, shell, bow tie or spirals noodles can all be used in this recipe depending on what you like or what’s available. While the noodles are cooking, chop up two green onions, 2 large pieces or celery and one large tomato. Also open and drain one can of turkey and one can of corn.
When the noodles have been drained and are cooled off, in a large bowl combine all the prepared ingredients including the noodles, veggies and turkey. Mix well until all ingredients are even distributed. Then, add 7 tablespoon of southwest ranch dressing, any brand you prefer, along with 7 tablespoons of sour cream. Mix until all ingredients are incorporated fully in the bowl.
This recipe, which can be made in only 15-20 minutes, makes around 8 servings. I can be eaten as a side or a meal and kept in the fridge between eating. It is best served cold. For an extra kick to this southwest recipe, add a few pinches of chili powder.
